<p>Bienenstich is a traditional German coffee cake and can be found in every German bakery. The name means literally &#8220;Bee Sting cake<strong>&#8220;. </strong>Why? There is a legend where the baker who baked the cake got stung by a bee because the cake attracted it. The topping are caramelized honey almonds.<strong><br />
Ingredients</strong><br />
4 eggs separated<br />
80 g sugar<br />
100 g flour<br />
20 g potato starch<br />
1 tbsp baking powder<br />
200 g heavy cream<br />
1 package Dr Oetker vanilla pudding<br />
<strong>Topping:</strong><br />
200 g butter<br />
100 g sugar<br />
2 tbsp honey<br />
4 tbsp heavy cream<br />
1 package Dr Oetker Vanilla sugar<br />
250 g sliced almonds</p>
<p><strong>Baking Instructions</strong></p>
<p>- Beat egg white until very firm.<br />
- Beat egg yolks with sugar until foamy, mix flour with baking powder and add it to egg yolks.<br />
- Carefully mix in firm egg whites.<br />
- Grease a form diameter 22-24 cm (or layer it with parchment paper), then fill dough into  the form.<br />
- For the topping  heat slowly butter with sugar, vanilla sugar, honey and heavy cream, stir continously, bring to a boil then add almonds. Let it cool off, stir it frequently then add it on top of the biscuit.<br />
- Bake in pre-heated oven for 20 minutes on 180 C or 350 F.<br />
- Meanwhile beat heavy cream until firm.<br />
- Make pudding per instructions and mix it with the heavy cream. Keep it cool.<br />
- Take the cake and place it on a baking grid, remove parchment paper, turn it around and let it cool off.<br />
- Cut cake in half (horizontal) and spread a layer of the cream (the cream is in the middle).<br />
- Keep it cool until you serve it.</p>

<p>Do you know that you cannot only use chicken eggs but duck eggs for baking? I was lucky to talk to Katharina Davitt who lives on a farm in Oregon where she keeps Saxony ducks.</p>
<div>Saxony ducks are very gentle and smart birds, and love to learn new things.  They are very quiet for ducks and most of the time you don&#8217;t even know they are around.  They are rather laid back.  Our ducks have grown up with our 3 hunting dogs and they love to hang around together.  They are free ranging all day long, and roam around the meadow with a small stream and pond for swimming.  For more information about this breed see:</div>

The eggs are collected first thing in the morning.  Ducks only lay once every 24 hours in the morning.  Our ducks free range all day long.  Their all day walking is very vital to the quality of hatching eggs and their health.  The duck house is kept above freezing and is cleaned daily.  This is important, since we live in the mountains, where it can get rather cold at night.  We also supplement their drinking water with vitamins, minerals, and probiotics to assure that the eggs are not deficient.</div>

<p><strong>Ingredients</strong><br />
1 1/3 cups granulated sugar<br />
1 1/2 stick melted butter<br />
2 Tablespoons water<br />
2 teaspoons real vanilla extract<br />
2 small duck eggs, use large eggs for cake like brownies (chicken eggs can be used instead)<br />
1 1/3 cups flour<br />
3/4 cup cocoa powder<br />
1/2 teaspoon baking powder<br />
1/4 teaspoon salt<br />
(3/4 cup chopped nut or chocolate morsels are optional</p>
<p><strong>Baking Instructions</strong><br />
- Preheat oven to 350F.<br />
- Mix the flour with the cocoa powder, baking powder and salt. Set aside.<br />
- In a mix mix the sugar, butter, water and vanilla extract until creamy.<br />
- Add the egg and mix until uniform in consistency. Mix in the flour mix. Grease a 9&#215;12 pan.<br />
- Add mix and bake for 20-25 minutes. Bake until a toothpick comes out clean.</p>

<p>Ingredients<br />
Dough: 200 g flour<br />
100 g butter<br />
1 egg<br />
½ package Dr Oetker Baking powder<br />
½ tbsp salt TL</p>
<p><strong>Topping</strong><br />
3 eggs<br />
1 cup heavy cream<br />
200 g German ham or bacon<br />
200 g grated cheese (Emmenthaler, Gruyere, Cheddar or your favorite cheese)<br />
salt and pepper, butter for the form</p>
<p><strong>Cooking Instructions</strong><br />
- Mix flour with baking powder, salt, butter and egg and knead it until you have a smooth dough.<br />
- Wrap dough in foil and place it for at least 20 minutes in the fridge.<br />
- Grease a quiche form with butter and form a 1 inch high border.<br />
- Cut ham in small cubes and spread them on the dough.<br />
- Mix eggs with heavy cream, salt and pepper and pour it over the dough.<br />
- Add cheese on top.<br />
- Bake it in pre-heated oven on 400 F (200 C) for 30 minutes.</p>

6 sheets gelatine &#8211; <a title="german gelatine sheets" href="httphttp://store.yahoo.com/cgi-bin/clink?gdcom+cbJvSj+droegefi2p.html://" target="_blank">Find them here </a><br />
400 g frozen raspberries<br />
200 g creme fraîche<br />
400 ml heavy cream<br />
1 package cake glaze Dr. Oetker, red &#8211; <a title="shop at german deli" href="http://store.yahoo.com/cgi-bin/clink?gdcom+cbJvSj+rufstglwisug.html" target="_blank">Find it here</a><br />
100 g roasted almond slices<strong><br />
Baking Instructions</strong><br />
- Pre-heat oven to 175 degrees C or<br />
- Grease the bottom of a baking form (round or heart shaped).<br />
- Separate eggs, beat the egg white until firm.<br />
- Mix egg yolks with 90 g sugar and the salt; beat until foamy using the double boiler method.<br />
- Carefully mix in the firm egg white. Mix baking powder with flour and powder it over the egg mix and mix it carefully.<br />
- Fill the dough into the form and bake it for 30 minutes.<br />
- Let the biscuit cake cool off for 5 minutes then take it out of the form and place it on a baking grid, let it cool off completely, then cut it horizontal in 2 halves.</p>
<p><strong>Filling</strong><br />
- Soak gelatine, defrost berries.<br />
- Mix 200 g of the berries with 60 g sugar (puree them) and press it through a sieve.<br />
- Add creme fraiche and mix it.<br />
- Press all water out of the gelatine and mix it with the berries; beat cream until firm; before the berry cream gets firm add the whipped cream and mix it.<br />
- Spread half of the cream on the lower heart piece; place second part on top and spread remaining cream over it.<br />
- Add remaining raspberries on top and keep an edge of 1 inch (2cm).<br />
- Make the cake glaze per instructions and pour it over the berries.<br />
- Beat remaining heavy cream until firm and spread 2 third of it it around the outer edges of the cake where you would place the almond slices.edges.<br />
- Fill  remaining cream into a frosting bag and squeeze little frames in the 2cm (1 inch) wide edge around the raspberries.<br />
- Decorate the edges with almond slices.</p>

Ingredients</strong><br />
125 g Butter<br />
100 g honey<br />
2 eggs<br />
1 point of  a knife vanilla<br />
125 g ground hazelnuts<br />
200 g flour<br />
½ package Dr./ Oetker baking powder<br />
125 ml milk<br />
1 tbsp baking rum (optional)</p>
<p><strong>Baking Instructions</strong><br />
- Beat butter, honey and eggs until foamy, add vanilla and grated hazelnuts, flour with baking powder, milk and rum.<br />
- Take baking form apart; butter the form with a baking brush very thoroughly (use butter or oil); put it back together and layer it with bread crumbs.<br />
- Fill in the dough but don&#8217;t fill it completely otherwise it will overflow in the baking process.<br />
- Bake on lowest level for 1 hour at 175 degrees C or  347 F; put a sheet of aluminum foil on top after 30 minutes.<br />

<p>Tortellini are not really German, but the way to cook them in this recipe is for sure German. It is one of my favorite gratins. You can vary the dish with different vegetable like carrots, peas, cauliflower, or aubergine. Vary it with different cheese too. Serve with green lettuce or just plain.<br />
Ingredients (serves 3-4)<br />
1 medium size onion<br />
1/2 green pepper, 1/2 orange pepper (or red)<br />
some broccoli<br />
1 small zucchini<br />
olive oil, salt, fresh ground black pepper<br />
12 oz or 340 g dried tortellini<br />
1 egg<br />
1 cup grated cheese (Gouda, pepper jack, cheddar or your favorite cheese)<br />
about 1/2 cup heavy cream</p>
<p><strong>Cooking Instructions</strong><br />
- bring water with some salt to a boil and cook tortellini per instructions.<br />
- cut onions and pepper in small cubes, cut zucchini in half and slice it.<br />
- wash broccoli and cut of the upper parts.<br />
- in a skillet heat olive oil, then add onions until transparent.<br />
- add chopped pepper, zucchini, broccoli and saute it for about 5-10 minutes (not too long as the vegetable should not get too soft).<br />
- spice vegetable with salt and pepper.<br />
- place the vegetable mix into an oven proof form, when tortellini are done ad them to the mix and stir gently.<br />
- beat the egg and mix it with heavy cream and 2/3 of the cheese, spice with salt and pepper.<br />
- pour it over the vegetable-tortellini mix and on top add remaining grated cheese (if not enough grate some more).<br />
- bake it in the pre-heated oven on 400 F for about 20-25 minutes until the cheese is slightly getting golden-brown.</p>

<p>Are you looking for an extravagant dessert? This one is not just extravagant, it has an exotic touch and will melt on your tongue.<br />
In Germany strawberries are used in many cakes and dessert recipes. As the strawberry season is coming up &#8211; in California we have them already since weeks in the shelves &#8211; I thought this delicious dessert recipe will be something you could even make for Easter. Happy Cooking!<strong><br />
Ingredients</strong><br />
300g fresh or frozen strawberries<br />
6 sheets white gelatine<br />
150 ml Lemon lemonade<br />
1 can Mango (425 ml) or fresh<br />
1 Dr. Oetker Vanilla sugar<br />
1 tbsp lemon juice<br />
100 g heavy cream<br />
1 tbsp ground pistachios<br />
1 tbsp powdered sugar</p>
<p><strong>Cooking Instructions</strong><br />
- De-frost strawberries (room temperature) or wash, remove green part from fresh strawberries, then cut them in halves.<br />
- Soak gelatine in cold water.<br />
- Mix strawberries with lemonade and sugar, then puree it.<br />
- Press gelatine gently and on low heat melt it, then add 2-3 tbsp strawberry puree and mix it. Then add entire puree.<br />
- Rinse 4 small forms or cups with cold water and fill them with the puree. Cover them and let them in the fridge for 4 hours so the puree gets firm.<br />
- Let canned mango pieces drip in a sieve, then puree them. Peel fresh mango  and cut in smaller pieces.<br />
- Add vanilla sugar and lemon juice as desired.<br />
- Whip heavy cream until firm and fill it into a frosting bag with a star beak.<br />
- Dip the filled forms briskly in hot water and topple it on a plate.<br />
- Pour the mango sauce around it and squirt some whipped cream aside.<br />
- Sprinkle with ground pistachios and powdered sugar.</p>

Currywurst (curry sausage) is very popular in Germany and it started when a German lady named Herta Heuwer served it on September 4, 1949 at her street booth in Berlin, corner Kant/Kaiser Friedrich Strasse in Charlottenburg.  It was not the sausages that made her famous, it was her special curry ketchup. In 1959 the given name &#8220;Chillup&#8221; was under copyright and Herta opened her first store which was open day and night and employed up to 19 ladies serving Currywurst. Kraft tried to buy the recipe from her but Herta won&#8217;t give it to them. Since 2003 at the same location you can find a plaque honoring her.<br />
The curry ketchup comes with Bratwurst that is sliced in 1 inch thick pieces; serve it of course with French fries.<strong><br />
</strong></p>
<p><strong>Curry Ketchup 1</strong></p>
<p><strong>Ingredients</strong><br />
250 g tomato paste concentrate)<br />
125 ml water<br />
125 g sugar<br />
30 g Curry powder<br />
½ cup pickles liquid<br />
1 pinch salt and pepper<br />

Cooking Instructions</strong></p>
<div id="rezept-zubereitung">- Heat water and dissolve sugar; add tomato concentrate and all other ingredients and bring it to a brisk boil<br />
- Fill the warm ketchup in jars like empty jam jars) and keep it in the fridge. Can be kept for about 4 weeks.<br />
<strong>Curry Ketchup 2</strong></div>
<div id="rezept-zubereitung"><strong>Ingredients</strong><br />
3 tbsp curry powder<br />
1 tbsp oil<br />
1 tbsp (or less) Cayenne pepper or chili powder, depending how spicy it should be<br />
100 ml Coke<br />
100 ml orange juice<br />
350 ml pure tomato ketchup preferably home made like the one above</div>
<div><strong>Cooking Instructions</strong><br />
- mix curry powder with the oil in a pan and heat it but watch out that it won&#8217;t become too hot, the curry powder will become bitter.<br />
- add cayenne pepper or chili powder, mix it well, then add coke very slowly so it won&#8217;t overflow.<br />
- let the sauce simmer for while until it is thick, then add orange juice.<br />
- while stiring continuously let it simmer for some moire minutes, then add the tomato ketchup and mix it very well.<br />
- let it cook for another 2-3 minutes.<br />
- spice with salt, pepper and maybe some more curry powder.<br />
Best for 1 week and kept in the fridge.<br />

Tips</strong><br />
Serve it over the sliced sausage and before adding the ketchup sprinkle some curry powder over the sausage pieces.<br />
Tastes awesome with steaks or any barbecue meat.</div>

<p>Surprise your friends and family with fried egg muffins on Easter. The muffins are easy to make and will make people smile. Not only for Easter! Happy Baking!</p>
<p><strong>Ingredients (for 6 muffins)<br />
</strong>90 g oil<br />
300 g flour<br />
1 tbsp baking powder<br />
100 g sugar<br />
1 Dr Oetker package vanilla sugar<br />
1 egg, 1 pinch of salt<br />
150 g white chocolate<br />
125 ml buttermilk<br />
1 tbsp cream of tartar (Natron in German)<br />
1 tbsp lemon juice<br />
1 big can of apricots</p>
<p><strong>Baking Instructions</strong></p>
<div id="rezept-zubereitung">- mix flour, baking powder, sugar, vanilla sugar, cream of tartar (natron) and salt.<br />
- chop white chocolate coarsely  and add it to dough.<br />
- let apricots drip but keep the juice.</div>
<div>- take 12 apricot halves aside;  cut remaining apricots fine and mix them with the dough.<br />
- mix oil with buttermilk, lemon juice, 75ml apricot juice and 1 egg, then add it to the dough until it is thicker.<br />
- fill muffins forms with the dough and place on each 1 apricot.<br />
- bake the muffins in preheated oven on 200 degrees C (or 392 F ) for 30-35 minutes.</div>

<p>In Germany we like to cook meals in a skillet. Why? It is fast and easy to make. Chicken or turkey is always a good combination with fruit such as pine apples or even pears. This dish is done in 35 minutes. Ready to cook? Happy Cooking!</p>
<p><strong>Ingredients (serves 4)<br />
</strong>500 g thin slices turkey<br />
salt, pepper, 2 tbsp flour<br />
4 onions<br />
1 lemon<br />
400 g ripe and firm pears<br />
50 g ghee<br />
200 ml chicken bouillon (broth)<br />
120 g cream cheese<br />
1/2 bunch fresh marjoram  or 1-2 tbsp dried<strong><br />
</strong></p>
<p><strong>Cooking Instruction</strong><br />
- Cut turkey in thin stripes, add salt and pepper.<br />
- Place it into a bowl and mix it with the flour; the meat should be covered everywhere with flour.<br />
- Peel onions, peel them in a way that all the skins keep together at the root part of the onion.<br />
- then cut them in 6 quarters.<br />
- Grate lemon peel, juice it.<br />
- Cut pears in halves, remove seeds and core, then cut it in 1/2 inch thick quarters; mix them right away with the lemon juice or they will get dark.<br />
- Heat ghee in a skillet, fry onions on all sides until light brown; take them off.<br />
- Let pears drip in a sieve over  a bowl, keep the juice.<br />
- Add pears with ghee into the skillet and fry them for 2-3 minutes, take them off.<br />
- Heat ghee and add 250 g turkey  and while turning the pieces, fry it for 3 minutes. Fry remaining meat the same way.<br />
- Add already fried turkey, lemon peel, onions and pear juice to the turkey in the skillet, mix it well, then add broth and cream cheese, cover it and bring it to a boil; on low heat let it simmer for 5 minutes.<br />
- From fresh marjoram take off the leaves and chop them. Mix it with the turkey stir fry.</p>
<p>Serve it with boiled potatoes.</p>

The healthy-green sauce came from France where it was called &#8220;Sauce verte&#8221;. In Italy is is popular under the name &#8220;Salsa verde&#8221; and in Germany it is a specialty of Frankfurt. There they call it &#8220;Grie Soss&#8221;. You can make it in two different variations but both are containing a minimum of 7 different herbs. It is not that easy to get all of them in the USA. The best is always to buy the seeds and grow your own herbal garden.</p>
<p>Back in the time of Goethe, the chopped herbs were for a while in a mix of oil and vinegar, added mashed egg yolk, spices and sour cream to it, then squeezed through a sieve. The sauce should be green, if it is not, then add some spinach juice. Happy Cooking!</p>
<p><strong> Recipe 1</strong>:<br />
3 hard boiled eggs<br />
125ml oil<br />
3 tbsp vinegar<br />
salt, pepper, sugar<br />
6 tbsp chopped herbs: borage, parsley chives, sorrel, cress, salad burnet, chervil<br />
(in German Borretsch, Petersilie, Dill, Schnittlauch, Pimpinelle, Kerbel, Sauerampfer, Kresse).</p>
<p><strong> Recipe 2: </strong><br />
500g quark<br />
250g sour cream,<br />
some milk<br />
salt, pepper, little bit of mustard<br />
3 hard boiled eggs<br />
6 tbsp chopped herbs: parsley, cress, chives, borage, salad burnet, sorrel, chervil<br />
(in German Borretsch, Petersilie, Dill, Schnittlauch, Pimpinelle, Kerbel, Sauerampfer, Kresse).</p>
<p>Mix all ingredients, place them in a fridge for 1-2 hours.<br />
Serve with boiled beef (or Tafelspitz), boiled potatoes (Salzkartoffeln) or fried potatoes (Bratkartoffeln).<br />

Ingredients</strong><br />
4 to 5 pounds beef<br />
(first-cut flanken, brisket or chuck)<br />
1 veal knuckle or marrow bone (optional)<br />
1 large carrot<br />
1 stalk celery, with leaves<br />
1 small knob celery root, trim off straggly roots, peel and rinse<br />
1 small parsnip, scraped and cut in half lengthwise<br />
1 parsley root, scraped<br />
1 onion, 2 cloves (poke the cloves into the whole onion)<br />
1 tablespoon salt, or as needed</p>
<p><strong> Cooking Instructions</strong><br />
- Tie the meat with a string so it won&#8217;t lose its shape.<br />
- Place beef in a pot and add cold water (beef needs to be completely covered).<br />
- Add the vegetable, cleaned and cut into smaller pieces to the meat (don&#8217;t cut the onion).<br />
- Bring to a boil, then reduce heat, cover it and let it simmer for about 2 hours (until meat is completely tender; test with a fork a pointed knife).<br />
- Take the meat and vegetable out of the broth, and keep it warm (covered with foil).<br />
- Add salt, pepper, nutmeg to the broth and make a soup out of it by adding thin soup noodles.<br />
- Slice the meat and place it on a warm platter, and sprinkle it with chopped parsley.<br />
- Serve it with green sauce, boiled potatoes or fried potatoes.</p>

<p>In Austria they serve <strong>&#8220;Apfelkren&#8221;</strong> with the meat. Apfelkren is a mix of horseradish with apples. Here is the recipe:<sup><br />
1</sup>/<sub>2 </sub>l apple juice with a bit of vinegar<br />
3 apples<br />
salt, grated horseradish (add as much you like; don&#8217;t forget horseradish is very spicy)<br />
Apfelmost (alternativ Apfelsaft mit einem Schuss Essig)</p>
<p>Peel apples, grate them and mix with the juice. Add salt and horseradish, mix well.</p>
