How to Make the German Lebkuchen Spice

Authentic Nuremberg Elisen Gingerbread

If you love the German Lebkuchen (gingerbread) and want to bake them you need a special spice that can be easily made from scratch. Find out in this article how to make the Lebkuchen Spice – so simple and easy. Happy Baking!

Ingredients

The amount below is equal to half a package of the commercial Lebkuchen spice. All spices are ground.
2 flat tsp cinnamon
1 flat tsp cloves
0.5 tsp of each:
cardamom
nutmeg
anise
star anise

OPTIONAL
If you like you can add these ground spices as well but only in very small amounts 1-2g
– Fennel
– Coriander
– Ginger
– Piment (Allspice)
– a hint of ground orange peel

Mix all ingredients in a bowl very thoroughly.
Place them into a jar or maybe you have an empty seasoning container that would be perfect for the spice. That’s it. Now you can use the spice for baking, adding it to jams or to your coffee. Some even add it to red cabbage or Sauerbraten.

For a bigger Spice Amount

8 tsp cinnamon
1/2 tsp cloves and anise
1 tsp of each: Ginger, Coriander, Cardamom, All spice, Nutmeg
