Do you love cheese cakes? If yes, here’s a delicious German cherry cheese cake recipe for you. Normally the German cheese cakes contain the so called “quark ” – How to make Quark – but it’s very difficult to find it in the US hence the mix of ricotta and sour cream. Happy Baking!
For the Crust
150 g flour
100 g butter
1 egg yolk
1 dash salt
For the Filling
4 eggs
600 g ricotta cheese
200 g sour cream
180 g sugar
1 sachet vanilla sugar
lemon zest and lemon juice
1,5 tbsp potato starch
200 g sour cherries (about 1 jar), or using fresh cherries
3 tbsp apricot jam
sliced almonds
This Kathi Baking Mix is perfect for this Cake
– Preheat the oven to 350°F or 180 C.
– Mix all ingredients for the crust and knead until you get a smooth dough.
– Let rest for 30 min: form a ball, wrap in plastic foil and keep in fridge.
– Layer a 10 inch springform with parchment paper.
– Roll the dough on a smooth surface with flour.
– Place the dough into the spring form, and also around the rim about 1 inch high.
– Separate eggs.
– Beat egg white until firm.
– Combine ricotta, sour cream, vanilla sugar, lemon zest and starch. Mix well.
– Add a splash of lemon juice. Fold in egg white.
– Drain the canned cherries.
– Spread them on top of the crust.
– Add the cream on top, spread even.
– Bake the cake for about 1 hour.
– Turn oven off and let cake sit for 30 min.
Warm the jam, press through a sieve and spread on cake surface.
– Add the slices almonds on top. If you like you can brown the almonds slightly in a non-stick pan without any grease.
