(serves 4)
2 celery stems, organic, with leaves
1-2 zucchini, organic
2 green peppers
salt, pepper to taste
3 tbsp white wine vinegar
1 dash sugar
7 tbsp sunflower oil or a taste neutral oil
Herbs: 2 tbsp dill, chopped – 2 tbsp parsley, chopped
400 g feta cheese
– Wash celery, cut off hard parts, slice very thin. Keep the celery leaves separate.
– Cut zucchini lengthwise, slice very thin (Julienne style).
– Remove seeds from peppers, cut in quarters, then in fine stripes.
– Mix all vegetables.
– In a bowl mix oil, spices and vinegar, add chopped herbs and the chopped celery leaves.
– Mix dressing with vegetable and set aside for 20 min.
– Cut feta in small cubes, add to salad before serving.
