German Goulash Beef Stew – Authentic Recipe

The German Goulash beef stew is actually a traditional dish from Hungary but it has become very popular in Germany as well. Many Hungarian recipes came to Germany  when Hungary was under the crown of the Great Austrian/German kingdom.This is an authentic German recipe. Goulash has two options:
1. Enjoy it as a stew, or
2. as a soup, the so called Goulash soup.
The Goulash soup has become a traditional New years Eve soup, served shortly after mid night. The Goulash soup can be spiced to taste with Cayenne pepper to taste or only with Hungarian Paprika powder. You decide how spicy the soup should be. When cooked right the beef for goulash and/or soup should be very tender.  Happy Cooking!

Ingredients German Goulash Beef Stew

1,5 kg beef (shoulder) or beef stew

2 garlic cloves (optional)
6 medium sized onions
some flour
3 tbsp tomato paste
1-2 tbsp clarified butter or a mix of olive oil and butter
1 tsp cornstarch
250 ml red wine, or just water and no wine
2 tbsp ground paprika (red Hungarian pepper, mild, medium or hot)
salt, pepper to taste
additional water as needed, some flour



Cooking Instructions Goulash Beef Stew

– Peel onions and garlic; chop both fine.
– Wash the meat and cut it into cubes if it is not already cut. Dry on kitchen paper.
– Heat oil in a big enough pan.
– Add onions and garlic (if you use it), and saute for 2 minutes on high heat.
– The meat should be added in small portions; brown it slightly and evenly from all sides, spice with salt, pepper and paprika.

– Dust the meat with some flour.
– Add red wine and let cook for 3-5 minutes.
– Fill up with water until the meat is covered.
– Let cook on low heat for 1.5-2 hours, cooking time depends on the meat quality and how big the beef cubes are. The first 90 minutes with a lid, the remaining 30 minutes without.
– Spice as needed.
– Dissolve cornstarch in a little bit of water and add to the sauce. The sauce should be thickened.

Options
30 min before the meat is done add sliced mushrooms.
Add carrots (sliced) and potatoes in cubes.
If you like a lighter and more creamy sauce add some heavy cream at the end.

– Mashed or boiled potatoes,
– Ribbon pasta,
– German Spaetzle
– Knoedel (dumplings)
