What cake should we bake for this weekend? What about a German Sandkuchen? It’s a classic German coffee cake that you will love. It is called Sand-cake because of its color that reminds of sand. This cake is very easy to make and fabulous for baking beginners. You can make it with or without a glaze. Any glaze is great for this cake or add some streusel too. Tastes especially good with a chocolate glaze. Happy Baking!
250 g butter (room temperature)
150 g sugar
1 package vanilla sugar Dr. Oetker (0.3 oz)
– How to make Vanilla Sugar –
1 dash salt
1 tbsp lemon juice
4 medium eggs
200 g flour
100 g potato starch
1 tbsp baking powder
Glaze
250 g powdered sugar
2 tbsp lemon juice
1 tbsp hot water
– Preheat oven to 350 F (180 C).
– Combine butter, sugar, vanilla sugar and salt, and beat until creamy.
– Add lemon juice or lemon flavor, then eggs one after the other.
– Continue mixing but not longer than 2 minutes.
– Mix flour, starch and baking powder, through a sieve add to dough.
– Grease a rectangle baking form or a Bundt cake form and sprinkle with breadcrumbs (or layer with parchment paper.
– Fill with dough and bake or for 50-60 min.
– When done let cool off before removing from the form.
