The German Linzer Cookies are classic German Christmas cookies which are very popular in Germany. The cookie consists of two layers and has jam in the middle. You can be creative and use your favorite jam, the classic version is using raspberry jam. If you can get jelly – we call it Gelee – such as red currant, that would be even better. It’s a bit of work but you will be rewarded by the delicious taste. Happy Baking!
For about 40 cookies
200 g butter
1 egg
75 g sugar
300 g flour
80 g ground almonds
0.3 oz or 1 Package Vanilla Sugar

1 dash salt
1 tsp heaped cocoa, unsweetened
1 tsp ginger bread spice (see below)
50 g semi sweet baking chocolate
50 g white baking chocolate
Plum or raspberry jam for the filling
