Ingredients German Asparagus Soup
1/4 liter water (the asparagus cooking water)
200 g fresh asparagus, green or white
30 g butter
1 tbsp flour
1/8 liter heavy cream
2 egg yolks (optional)
salt, nutmeg, pepper to taste
chopped chives
1 cube instant vegetable broth, or 1 tbsp
splash of white wine
Cooking Instructions German Asparagus Soup
- If you use white asparagus peel first, then cut off hard parts. Green asparagus: cut off the hard parts.
- Cut asparagus in pieces and cook in water until soft.
- In a pan melt butter, add flour. Whisk until butter and flour is combined (don’t let it become brown).
- Fill up with asparagus water, add the vegetable instant broth. Let cook for 10 min.
- Spice to taste, add heavy cream, white wine and if you use the egg yolks, don’t bring the soup anymore to a boil.
- Sprinkle chopped chives on top.
