Cooking Instructions Fried Potatoes

– Boil potatoes the day before and keep them in the fridge (that’s the best). Potatoes should not be too soft, otherwise they will fall apart during frying process.
– Peel potatoes and slice them thinly.
– Chop onion fine.
– Cut ham in small cubes.
– Heat oil in a non-sticking skillet (This is important. In any other regular pan it will stick to the bottom).
– Fry onions until transparent, add the ham. Mix well.
– Let cook for 1-2 min, then add sliced potatoes.
– Add spices as needed. Mix carefully, don’t mash potatoes.
– Turn them several times until they are slightly brown on all sides and crunchy.
– Serve them with fresh bread, sausages or Buletten, meatloaf or sauerkraut.

  1. For a bavarian version, replace the nutmeg with caraway seeds. Ham or bacon is optional. For more crunch, sprinkle some flour over the sliced potatos before frying.
