The German carrot celery salad can be used a s a side dish for summer or winter meals. Carrots and celery are used during the winter months a lot. This is the recipe of my sister in law, so it’s a proven recipe. I remember very well when I had this salad at my last visit in Germany for the BBQ. You can add an apple as well if you like. Try it out. You will love it. Happy Cooking!
5-6 medium size carrots
1/2 celery root
1 small apple, slightly sour (optional)
2 tbsp. crème fraiche or yoghurt, optional
3-4 tbsp vinegar
3-4 tbsp sunflower, olive or safflower oil
salt, pepper, lemon juice to taste
1 tbsp parsley and/or chives
– Peel first the apple and celery. Clean the carrots.
– Grate carrots, apple and celery root.
– Chop the herbs fine.
– Mix the herbs with the crème fraiche/yoghurt.
– Combine the cream with carrots, add vinegar, oil, salt and pepper to taste.
– Mix well.
Let sit for 10 minutes before you serve this delicious salad with fresh bread and butter. Tastes great as a cold supper with cheese and cold cuts, salami and ham.
