Party Pasta Salad with Feta

This party pasta salad  with feta cheese is ideal for barbecues and has as main ingredient a special salad, Frisee.
Frisee salad has curly leaves and is also called chicory or endive. For this salad we are using short pasta such as ellbow or bow tie pasta, short macaroni pasta is great too. The red pepper brings some color into it and the vinaigrette gives it a mild Italian  flavor but it is an authentic German recipe. It makes a great salad for your next party. Happy Cooking.

Ingredients Party Pasta Salad

200 g Feta cheese (firm)
3 -4 mini pepper in red, yellow and orange
1 small onion
1/2 frisee salad, see below
350 g short pasta, eg. ell bow pasta or short macaroni

Dressing
4-5 tbsp balsamic vinegar
4-5 tbsp olive oil
salt, pepper to taste
dash of sugar

Cooking Instructions

– Cook pasta in boiling water  with some salt.
– Cut feta cheese in cubes, the pepper into small stripes.
– Chop onions fine.
– When pasta is done rinse them for 2-3 seconds under purified cold water so they won’t stick together.
– Mix vinegar, salt, pepper and sugar, then drip oil to the vinegar; add onions and mix well.

– In a bowl mix pasta with dressing, let sit for 10 minutes.
– Wash salad, dry it and tear the leaves into little pieces (don’t cut them with a knife).
– Add it to the pasta shortly before serving.
– Spice with salt and pepper if necessary.
– Toss salad very well.
