German Carrot Soup – Healthy and Good

If you like carrots, you will love this recipe: German Carrot Soup. An inexpensive, simple and healthy soup that can be made for a big family or for a dinner for two. We recommend to use organic carrots or best, carrots fresh from the market or garden. Happy Cooking!

Ingredients German Carrot Soup

1 smaller onion
1 tsp sunflower oil
1 kg carrots
3 potatoes
1 garlic clove (optional)
100ml heavy cream (or less, depends how creamy you like the soup)
white pepper, salt to taste

Cooking Instructions German Carrot Soup

– Chop onions and garlic fine.
– Wash and prepare carrots, cut in slices.
– Peel potatoes, cut in small cubes.
– Saute onions and garlic in oil, add carrots and potatoes. Mix well.
– Spice with salt and pepper. Let simmer covered for 2-3 min.
– Add the broth, cover again, let simmer until carrots and potatoes are soft.
– Puree soup with a stick mixer.
– Mix in heavy cream.
– If soup is too creamy add more broth.

Instant Broths in Detail
For this recipe you can use instant vegetable broth as well. If you are using the broth from Knorr be aware that the products contain flavor enhancers that are considered unhealthy.

The American Knorr broth (and all other products) contains chemicals that are considered to be critical. On the USA market there is no organic version offered like in Germany which is called BIO – contains no chemicals. At least in Germany you have the option to get a non-chemical broth version. BUT the regular German broth version contains the same flavor enhancers as the US Knorr broth products.

Natural Yeast Extract, Sea Salt, Carrots, Onions, Turmeric Root, Leek, Parsley, Nutmeg, Garlic, Lovage, Celery, Pepper, Balm. Dill, Paprika.
