Hunter Style Toast – German Snack

The Hunter Style Toast is served in many German restaurants and it is often a snack. You can use different meat to make this dish: pork Schnitzel or filet mignon, breakfast steak or even turkey/chicken breasts. Alternatively to the mushrooms you could use chanterelles as well. Some recipes add boiled ham or bacon to the meat. The cheese that you use on top should be high quality cheese such as Irish Cheddar, Emmenthaler or Gouda, and not the chemical loaded processed toast cheese. Happy Cooking!

Ingredients Hunter Style Toast

3 tbsp Crème fraîche or 100ml heavy cream
4 slices Gouda (should match the size of the toast bread), if you use a longer slice of bread use more cheese
4 slices toast bread, or Farmers Bread, alternatively “Schwarzbrot”, a whole grain dark brown bread

2 breakfast Steaks, thinly sliced, alternatively use pork filet mignon or Schnitzel
2 tbsp chopped parsley
500 g mushrooms, white
1 small onion
salt, pepper to taste
dry white wine to reduce , optional

Cooking Instructions Hunter Style Toast

– Season the steaks with salt and pepper.
– Chop onions and parsley fine.
– Prepare mushrooms, slice thin.
– Fry the steaks for 2-4 min (cooking time depends on the steak thickness and quality) in some butter on both sides. If you use pork filet mignon the cooking time will be much longer like 6 min.
– Remove from pan, set aside and keep warm.

– Fry onions in the same pan with a bit more butter for 2-3 min. Season with salt and pepper.
– Add chopped parsley, then creme fraiche. Season as needed. Reduce with white wine if you like and saute for another min.

– If you use toast bread roast it in the toaster until golden colored.
– Place steaks on top, then add mushroom mix and finally add cheese.
– Broil until the cheese has melted.
– Sprinkle with some chopped parsley or chives.
