German Tomato Soup – Best with Fresh Ripe Tomatoes

When tomatoes are ripe in abundance, what do you do with them? Of course there is tomato sauce and another dish would be to make a German Tomato Soup. It’s a very simple soup without any fancy ingredients. The only fancy ingredient are tomatoes. They have to be ripe, red and juicy.  The recipe is very basic, we don’t add sugar, flour or cream. You might like this recipe because it’s so simple and easy to make.  In my opinion, it’s the best tomato soup ever! Happy Cooking!

Ingredients German Tomato Soup

2 lb ripe tomatoes
2 small onions
1-2 tbsp olive oil
salt, white pepper to taste
fresh oregano leaves or dried to taste
fresh parsley or basil

Cooking Instructions German Tomato Soup

First you need to Peel Tomatoes
– Cut with a knife a cross on the top or bottom side of the tomatoes.
– Place them in a big bow.
– Pour enough boiling water over them so all of them are covered. Leave tomatoes in the water for 10-15 min.
– Just remove skin with hands as is has become very loose around the tomatoes. That’s how it should be. If the tomatoes are not quite ripe leave them n the water 10 min longer.

– Cut tomatoes into small pieces. Keep all water that will drain from the tomatoes.
– Peel onions and chop fine.
– Heat olive oil and saute onions for about 2-3 min, add tomatoes.
– After 2-3 min add the spices.
– Let simmer on low heat covered with a lid for at least 20 min.
– With a stick mixer puree the soup.
– Spice if necessary and serve with chopped parsley or basil.

TIPS
The quality of the soup depends on the tomatoes, how rope they are, if they are juicy and organic. I am using only organic and very ripe tomatoes. There will be enough water in the tomatoes for making a soup and normally you don’t have to add tomato paste. You can always add some broth or tomato paste or some garlic cloves if you like.
Add some thyme and/or rosemary for a Mediterranean taste.
